Kohlrabi Asian Salad

A quick & easy cold salad made with delicious fresh kohlrabi. Most of the ingredients can be picked up at the Farmer’s Market. Your local discount food store such as Twelve Baskets, is bound to have the rest!


3 kohlrabies, chopped (can use 16oz of cabbage to substitute)
8 oz of spinach, chopped or left whole
1 3oz package of ramen noodles, crushed, discard season
1 cup sunflower seeds, de-shelled
1 cup sliced almonds (optional)
½ cup sun-dried tomatoes without oil, chopped
1 large bunch of chives, coarsely chopped
1 small bunch of summer savory, coarsely chopped (can
substitutes with ½ bunch of oregano and ½ bunch of
1 small bunch of basil, coarsely chopped
¾ olive oil
¼ apple cider vinegar
3 tbsp granulated sugar


Place all ingredients into large bowl and mix together making
sure that everything is coated with the olive oil and vinegar.
Serve chilled.
